One of the most baffling things to master, for me, was the tofu scramble. I could make it look like eggs, but it always tasted like plain tofu. Until I finally went on Amazon and ordered the secret ingredient- black salt. This salt has a sulfur egg smell and taste. It makes the tofu indistinguishable from scrambled eggs, which is important if you feed picky toddlers who are used to real eggs!
Breakfast Scramble
Ingredients:
- 1/4 block extra firm tofu, pressed lightly
- Vegan butter (We love miyokos cultured vegan butter or Earth balance buttery sticks)
- Turmeric
- Black salt
- Garlic powder
For taco:
- Tortilla
- Sliced avocado
- Hot sauce
Instructions:
Melt a pad of vegan butter in pan on medium high. Crumble the block of tofu into pan. Add a pinch of turmeric powder, garlic powder, and about 3 pinches black salt, to taste. Stir, and heat through. That’s it! You’ve got scrambled tofu!
To assemble taco, begin with tortilla. Add tofu, hot sauce, and avocado. Enjoy!
