It’s not hard to find someone who hates kale. It can be the most bitter, chewy, and disgusting health food.
However, you’ve never tried kale until you’ve tried this recipe. Every time I make it, I force another friend to become a kale super fan. Try it. Just try it.
1/4 C Apple Cider Vinegar
1/4 C Vegan Mayonnaise
2 T Agave
1 T Penzy’s Buttermilk Ranch Dressing Base (or, sub salt, black pepper, garlic powder, and smoked paprika, to taste)
Whisk together, then add:
2- 3 C Chopped Kale
1/4 C Shredded Carrot
1 Finely Chopped Sweet Red Pepper
Toss until the veggies are covered in dressing, let sit in fridge covered for at least 2 hours, or overnight, to soften the kale. Enjoy!
