The best way to get my kids to eat healthy food is by packaging it in a fun way. Mini muffins, “dinosaur” green smoothies, or “pretty pink” beet hummus.
These sticky breakfast muffins are a great thing to prep ahead of time, for busy mornings. They are just a little sweet, moist, and dense.
Applesauce Flax Mini Muffins
Begin by preheating oven to 350 degrees F, then combining:
- 2 heaping Tablespoons ground flax
- 10 T water
Let sit for 3 minutes, this will create 2 flax eggs. In a separate bowl, combine:
- 1 cup flour
- 1/2 cup coconut sugar
- 1T baking powder
- Pinch of salt
- 1/2 t cinnamon
- 1/2 t vanilla
- 1/2 cup rolled oats
- 1/2 cup unsweetened applesauce
- 1/2 cup soy milk
Add the flax eggs, and combine until batter is smooth and sticky.
Fill greased mini muffin pan, top each muffin with a sprinkle more of rolled oats, and bake for 12 minutes. Serve warm or cold, keep in sealed container in the fridge for up to a week.
