Simple, dark, and decadent… Your kids won’t be able to tell that there are beans hidden inside.
Black Bean Brownie Bites with Oreo Cream
Preheat oven to 350 degrees F.
Combine in a high speed blender:
- 1 can black beans, drained and rinsed (I used the kind with sea salt. If unsalted, add 1/2 t salt to recipe)
- 1/2 cup of each of the following: cocoa powder, flour, sugar, canola oil, soy (or any plant) milk
- 1T baking powder
Blend on low speed, scraping sides as needed until completely smooth.
Pour about 2T into each cup of a greased mini muffin pan. Bake 12 minutes.
While brownies bake, combine in a separate bowl:
- 1 cup powdered sugar
- 1 pinch salt
- 1/3 cup melted vegetable shortening (can sub coconut oil)
Blend until oil begins to harden and mixture begins to create clumps.
Once brownies are cooled enough to touch, but still warm, press one blob of cream filling into the top of each.
Makes 24 mini brownies.
