Perfect for snacking, atop a loaded Greek salad, or inside warm spanakopita pockets, this marinated tofu has the taste and texture of feta cheese.
Marinated Tofu Feta
Combine in large bowl with lid:
- 1/2 cup red wine vinegar
- Juice of 2 lemons
- 1 t salt
- Fresh ground black pepper, to taste
- 1 t garlic powder
- 3 T Olive oil
- 3 T oregano
- One block extra firm tofu, cut into bite size pieces
Mix well, to ensure all tofu is covered. Seal with airtight lid and allow to sit in fridge at least overnight, and up to 4 days before use.
