These sticky corn muffins balance out the heat of a vegan chili, and pair perfectly with your favorite bbq!
Vegan Orange Corn Muffins
Preheat the oven to 350 degrees F. Line a muffin pan with papers, then mix dry ingredients before adding the wet:
- 1 cup corn meal
- 1 cup white flour
- 1 Tbsp baking powder
- 1 tsp salt
- 1/4 cup sugar
- 1 tsp smoked paprika
- Dash cayaenne pepper
- 1/2 cup melted coconut oil
- 1/2 cup orange marmalade
- 1/2 cup soy milk
- 1/2 cup aquafaba
Fill cups with about 1/4 cup batter (3/4 full). This recipe makes about 18 muffins. Bake 16-18 minutes. Serve warm or cool, topped with vegan butter and a dash of smoked paprika. Keeps 2-3 days in an airtight container.
